A method of reducing or eliminating the mutagenicity of coffee by causing catalase, peroxidase or a combination of peroxidase and hydrogen peroxide to act on a coffee beverage or an in-process material at any stage of the manufacture of coffee beverage, such as roasted coffee beans, roasted and milled coffee beans, coffee extract, concentrate of the coffee extract or soluble coffee powder. Also disclosed is a mutagenicity inactivating agent that comprises either catalase or peroxide and which can be used in said method.
