PURPOSE:To provide an antioxidant capable of effectively suppressing the degradation of a food by oxidation, by treating crushed sesame seeds with beta- glucosidase, and using the product as an active component of the antioxidant. CONSTITUTION:Crushed sesame seeds (e.g. defatted sesame seeds after oil expression) or extract of sesame seeds with a solvent (preferably extracted with a hydrated alcohol composed of a mixture of a 1-4C alcohol and water at a weight ratio of 10:90-90:10) are treated with beta-glucosidase preferably at 30- 60 deg.C and 3-7pH. The reaction product is extracted with a hardly water-soluble solvent such as ethyl acetate to obtain the objective antioxidant.
