The object of the invention relates to a process for the manufacture of dry sausage and the like. It consists of an acetoglyceride produced from a monoglyceride prepared with natural fatty substances preferably supplemented with annatto and canthaxanthin. It is designed to allow the manufacture of a dry sausage without a casing. |
