PURPOSE:To prepare crisp fish paste of marine product rich in calcium, having improved flavor, using fish bone treated with an acid solution as part of a raw material. CONSTITUTION:Fish bone is boiled or steamed at >=0.3kg/cm<2> (gauge pressure), preferably at 0.5-2.0kg/cm<2> (gauge pressure) while being immersed in a solution of an acid such as lactic acid, acetic acid, etc. adjusted to <=3.5pH, preferably about 2.0pH, or it is immersed in the acid solution and boiled or steamed, to give treated fish bone which is soft, easily ground, has white color tone free from fish smell. 3-7wt% preferably 5wt% of this fish bone is added to a raw material for fish paste of marine product, which is ground, molded and heated by a conventional procedure. |
