The invention relates to a multicomponent cleaner which consists of an alkaline component A and of an acidic component B, where component A consists of 1 to 20% sodium disilicate trihydrate, 1 to 5% sodium dihydrogen phosphate, 1 to 5% sodium sulphate, optionally up to a maximum of 5% sodium tripolyphosphate, and 0.3 to 4% benzenesulphochloramide sodium and 0.1 to 4% sodium benzoate, made up to 100% with water, and component B consists of 10 to 30% citric acid and/or 5 to 20% tartaric acid, likewise made up to 100% with water, and to methods for cleaning soiled surfaces, in particular of systems and equipment in the foodstuffs industry. The multicomponent cleaner according to the invention acts on a variety of surfaces in a particularly gentle manner without etching or corrosion effects.
