PURPOSE:To prepare an oily substance having the flavor of apple, and completely free from soapy smell, by treating oil or fat containing a 12C fatty acid as a main constituent fatty acid, with bacteria belonging to Rhizopus genus or Mucor genus or enzyme produced by said bacteria. CONSTITUTION:Bacterial strain belonging to Rhizopus genus or Mucor genus and capable of proliferating using oils or fats as a carbon source, e.g. Rhizopus javanicus TAKEDA IFO 5441 or 5442, or Mucor javanicus WEHMER IFO 4565, 4570, 4572 or 5382, or enzyme produced by the above bacteria, are made to contact with a natural and/or synthetic oil or fat containing a 12C fatty acid as a main constituent fatty acid. |
