PURPOSE:To obtain an extract of a hard mushroom efficiently, by the enzymic decomposition or fermentative decomposition of the hard mushroom, and the extraction of the resultant decomposition product under boiling and heating. CONSTITUTION:A hard mushroom of the wooden, corky, felty or leathery mushroom, e,g. a polypore, pulverized into a fine particles, fine fragments or powder, and an adequate amount of water or a saccharide soluton is added thereto. An enzymic material, e.g. cellulase or hemicellulase essentially, is added to the resultant mixture and subjected to the enzymic or fermentative decomposition at room temperature or alittle higher temperature. The resultant decomposition liquor is then boiled in a cooker, high-pressure vessel, etc. to give an extract, which is if desired concentrated. |
