PURPOSE:To prepare a drink containing hen's egg, etc. and having suppressed characteristic taste and smell of hen's egg, by dispersing hen's egg, etc., cheese, and natural gum in water, and heat-treating the dispersion. CONSTITUTION:Hen's eggs (fresh egg, frozen whole egg, frozen egg yolk, frozen egg white, died egg yolk, enzyme-treated egg, etc.), cheese (natural cheese, process cheese, etc.) and natural gum (gum guaiac, locust bean gum, gum karaya, xanthan gum, etc.) are dispersed in water, and heat treated at >=70 deg.C. |
