PURPOSE:To eliminate the use of a high-purity fatty acid and a large amount of a surfactant, by incorporating diglycerol ester of a fatty acid ester, propylene glycol ester of a fatty acid and others in a foaming fat or oil for a cake. CONSTITUTION:In preparing a foaming fat or oil for a cake, (A) 0.5-8pts.wt. diglycerol ester of a fatty acid, (B) 0.5-8pts.wt. propylene glycol ester of a fatty acid and (C) 0.5-8pts.wt. mixture of one or more selected from glycerol esters of fatty acid, sucrose esters of fatty acids and lecithin are incorporated in the fat or oil. The fatty acid to be used contains stearic or behenic acid as main components but is not necessarily a high-purity one, and palmitic acid, myristic acid, etc. may be contained therein. Particularly, the diglycerol ester of the fatty acid may contain 80% or more diglycerol and 60wt% or more monoester. The content of the surfactant can be reduced from the ordinary value of 18% to 10%. |
