PURPOSE:To prevent the contraction and color change of eggs and the hardening of the roe membrane, by immersing a salmon roe in a common salt solution of a low concentration, freezing the separated eggs in an inert gaseous atmosphere, and storing the frozen eggs. CONSTITUTION:Eggs separated from a salmon roe are immersed in a common salt solution of concentration about 1-5% in a volume of preferably about 2l based on 4.4kg the salmon roe for 10-60min and allowed to stand in a vessel like a bamboo basket for 10-60min and drained. The drained eggs are then frozen in an inert gaseous atmosphere, e.g. nitrogen gas, at -50 to -120 deg.C, preferably about -80 deg.C. |
