The bread-baking oven has the form of a thermally insulated cabinet with trays or baking plates (30-38) made of fireclay refractory. The available baking area is many times larger than the bottom area of the oven. Heating up by means of combustion gases is made possible due to the fact that a number of baking plates (31, 33, 35, 37) are mounted fixedly (50, 52) while one vertical inside wall (11) is displaceable horizontally together with a number of baking plates connected thereto and mounted on rollers (51, 53). A meander-shaped passage for the combustion gases is thus produced. During baking, the displaced baking plates are moved back into their starting position. In order that relatively large loaves of bread can also be baked, some of the baking plates are additionally adjustable in the vertical direction. <IMAGE>
