Xylose and xylitol are prepared from ligninfree hemicellulosic material in which the polysaccharides have been converted to monosaccharides by fermentation in an aqueous medium with a ferment which is inert to pentases, passing the product through a cationic and then an anionic ion exchange resin to give a xylose solution, and, if desired, reducing the latter to xylitol.
