PURPOSE:To improve shape retention of fats and oils at high temperature and melting in the mouth by quenching a molten fat and oil base consisting essentially of plastic fats and oils and blending the quenched fat and oil base with wax powder. CONSTITUTION:A molten fat and oil base consisting essentially of plastic fats and oils such as shortening or margarine is quenched according to a conventional procedure, optionally kneaded and blended with wax powder (e.g. candelilla wax) having <=20mum particle diameter and blended, it necessary, with >=1% powdery fats and oils (e.g. extremely hardened oil of beef tallow having 45-70 deg.C melting point). |
