PURPOSE:A starting composition for soybean curd that is produced by combining flattened soybeans with an alkaline agent, thus being capable of producing good- quality soybean curd or fried soybean curd through an extremely shortened process. CONSTITUTION:An alkaline agent selected from the group consisting of weak-acid and strong-base salts such as sodium carbonate, sodium tripolyphosphate and calcium hydroxide is added to flattened soybeans that are less than 0.5mm., preferably 0.15-0.4mm. thick and composed of more than 90% of less then 40mesh particle size and of 70 or higher NSI (soluble nitrogen index) in such an amount that the pH becomes 6.6-7.0 when water is added. |
