PURPOSE:To prepare a KONJAK (jelly made from starch of devil's tongue) substance which is a coagulated glucomannan having weakly alkaline, neutral or weakly acidic nature, high uniformity and controlled pH without deforming the shape of original KONJAK. CONSTITUTION:A KONJAK substance is produced by treating water-swollen KONJAK powder with an alkaline agent. In the above process, a neutralizing agent surface-covered with a skin is compounded to KONJAK powder or the alkaline agent, the mixture is gelatinized with heat and the covered neutralizing agent is dissolved to obtain the objective KONJAK substance having weakly alkaline, neutral or weakly acidic nature. |
