<p>PROBLEM TO BE SOLVED: To provide a method for preserving in a frozen state capable of taking vegetables containing edible wild plants with maintaining bright colors as far as possible and resistance to the teeth with feasting their feeling in eating and colors even out of their seasons. SOLUTION: In preserving vegetables containing edible wild plants such as bracken, kidney beans, etc., in a frozen state, after almost uniformly adhering common salt to the whole of boiled vegetables obtained by boiling the vegetables in boiling water and having resistance to the teeth, the boiled vegetables are rapidly frozen within a time in which water in the boiled vegetables are not substantially absorbed by the common salt.</p> |
