<p><P>PROBLEM TO BE SOLVED: To provide a method for the preparation of a light and refreshing sake (Japanese rice wine) containing a large amount of ethyl-α-D-glucoside and having extremely low amino acid degree. <P>SOLUTION: The method for the preparation of sake comprises the preparation of an unrefined sake by using an enzyme agent containing anα-glucosidase and a malt under a malt preparation step, and the preparation of sake using the unrefined sake. <P>COPYRIGHT: (C)2008,JPO&INPIT</p> |
