Process for preparing hydrolysed cereals with fruit or honey comprises (a) preparing a mixture comprising either (i) cereal flour, fruit (whole or in pieces) and an alpha-amylase, or (ii) cereal flour, honey and an alpha-amylase, (b) treating the mixture by injection of steam in several successive treatment zones, the steam being injected in the form of an annular jet surrounding the mixture, in counterflow or in parallel flow to the direction of passage of the mixture in the first zone and in counterflow in the successive zones and the amount of steam injected decreasing from stage to stage, and (c) drying the treated mixture. Also claimed is an apparatus for carrying out the process. |
