A process for preparing food flavour precursors which comprises enzymatically hydrolysing fruit pulp fibres with a pectolytic enzyme and a process for the preparation of a food flavour which comprises mixing the ingredients of the food flavour with from 1 to 5% of the food flavour precursor thus prepared.
