The invention relates to products obtainable from a modified guar protein extract, to a method for the production thereof and to cosmetic or pharmacological or plant protective compositions or to domestic care agents containing said products. The inventive products are particularly suitable for treating and/or modifying and/or coating the skin, hairs, hard and textile surfaces and, in particular, plant leaf surfaces.
