PROBLEM TO BE SOLVED: To provide a method for producing at a low cost, oil and fat which highly contain γ-oryzanol of an arbitrary concentration without being restricted by a γ-oryzanol concentration of raw material oil and fat.SOLUTION: A method for producing γ-oryzanol-containing oil and fat includes: (A) a step of obtaining an oil and fat treated product having an oil layer and an alkaline oil sludge layer containing γ-oryzanol salt; and (B) a step of adding acid to the oil and fat treated product obtained in the (A), transferring γ-oryzanol from the alkaline oil sludge layer to the oil layer, and collecting oil and fat increased in a γ-oryzanol content. The method can produce at a low cost, oil and fat containing γ-oryzanol of an arbitrary concentration without being restricted by a γ-oryzanol concentration of raw material oil and fat.SELECTED DRAWING: None
