摘要 The invention relates to the control of the process of drying the products. The method of controlling the spray-drying of a milk product consists in regulating the temperature of the heat-transfer medium entering the drying stage and the temperature of the exiting heat-transfer medium. Provision is made for the simultaneous determination of the exiting heat-transfer medium's content of heat-decomposition products of the powdered milk. If this content is within the prescribed margin, the temperature of the heat-transfer medium entering the drying stage is corrected, with consideration of the temperature of the exiting heat-transfer medium. If the said content diverges from the prescribed value, the release-speed constant is determined for the heat-decomposition products of the powdered milk. If this constant is below a predetermined critical value, the temperature of the heat-transfer medium entering the drying stage is lowered. A fire-alarm signal is generated if the speed constant exceeds the predetermined critical value.
