PURPOSE:To solubilize a wide kind of yeast independently of its age, and to obtain a dissolved yeast useful as a yeast extract, enzyme, and coenzyme, by treating a yeast with a microorganism to solubilize a yeast. CONSTITUTION:A mold of a yeast(e.g., live mold of yeast cultivated with waste water of food production, excess yeast during beer production, etc., and concentration used is preferably >=10<7>/ml) is aerobically treated with a microorganism to solubilize yeast[e.g., >=10<5>/ml YLM-1(FERM-P6781) is used] preferably at 7-9pH at 30 deg.C.
