The food-product sector requires that portions always have the same weight, wherein only one weight tolerance of ± 3% is authorised if possible. The aim of said invention is to provide a method and device which respect said maximum deviation even for fresh meat with bones, despite a high processing speed and a low probability of breakdown. The inventive method makes it possible to cut off weight-accurate slices of a cutable product (3) having a limited form-stability but comprising a form-stability constituents and consists, in monitoring and/or controlling physical ratios during or just prior to cutting. The inventive device for cutting-off weight-accurate slices of the cutable product (3) comprises mainly a shaping tube (101) provided with a shaping channel (103) whose inner contour makes it possible to receive the cutable product (3) of different cross-sectional dimensions containing bones (K) of different cross-sectional dimensions, wherein said channel has, in particular, an elongated cross-section with very rounded corners. |
