<P>PROBLEM TO BE SOLVED: To provide a method for quickly producing plum liquor emitting ripe fragrance having sweet-sour fruity aromatic scent suggesting peach and tropical fruit as a whole, and a new plum liquor produced by the method. <P>SOLUTION: The plum liquor containing a ripe fragrance component at a remarkably high level is produced by freezing a fully-ripe plum or a force-ripe plum and immersing it in an aqueous solution of an alcohol or a sugar-containing aqueous solution of an alcohol. <P>COPYRIGHT: (C)2011,JPO&INPIT |
