摘要 PROBLEM TO BE SOLVED: To provide a low ethanol-containing malt extract-containing beverage having suppressed discomfort taste like immature cereals in mouth and good in acid taste.SOLUTION: There is provided a malt extract-containing beverage containing following components (A), (B) and (E), (A) proline, (B) alcohol having 3 to 7 carbon atoms of 0.00005 to 0.5 mass% and (E) polyphenol of 0.01 to 0.5 mass% and having mass ratio of the component (A) and the component (B) [(B)/(A)] of 0.005 to 2500 and pH of 3 to 3.5 and the content of ethanol of less than 1 mass%, heat sterilized with a status of coexistence of the components (A) and (B). There is provided a malt extract-containing beverage further containing organic acid and a salt thereof as an acidulant as a component (C) of 0.0005 to 0.2 mass% and carbonic acid gas of 1 to 3 (v/v) by gas volume as a component (D).SELECTED DRAWING: None
