PROBLEM TO BE SOLVED: To provide a green color paste and an extract-containing liquid obtained from leaves of a green plant or unripe citrus fruits with green skin as raw material, or a method and apparatus for manufacturing the green color paste.SOLUTION: The manufacturing method includes: mixing a raw material 10 including a green plant such as green tea and other dried tea leaves or washed unripe citrus fruits with green skin with water 20 to make a mixture 11; pulverizing the mixture 11 in a stone mill type pulverizer 3; heating a mixture of the ground product and water in a copper-made pressure container 5 under pressure; and solid-liquid separating the obtained mixture 12 of liquid and paste with a centrifugal separator 9 into an extract-containing liquid 15 and a green color paste 16. Alternatively the green paste is impregnated with the condensed extract-containing liquid 15.
