The present invention relates to a cooking method of low fat ginseng-chicken-soup (samgyetang) and low fat samgyetang manufacture thereby, comprising: a step of manufacturing a first samgyetang broth (step 1); a step of manufacturing a second samgyetang broth (step 2); a step of manufacturing a samgyetang broth by mixing the first samgyetang broth and the second samgyetang broth (step 3); and a step of manufacturing low fat samgyetang by heating chicken after inputting the chicken in the samgyetang broth. The manufacturing method enables to brew medicinal ingredients, and has an advantage of neutralizing fat in the chicken.
