The present invention relates to a method for reducing stink from an epicarp of gingko and fermented soybean paste using the same. The provided method for reducing stink from an epicarp of gingko includes the steps of: manufacturing a gingko epicarp soybean paste which is a mixture of an epicarp of gingko and a soybean paste; and fermenting the gingko epicarp soybean paste.
