The present invention relates to an instant coffee using Acanthopanax koreanum and a manufacturing method thereof. According to the present invention, active components and efficacies of Acanthopanax koreanum, which is good for health, are added to coffee that has been receiving attention as favorite food, thereby providing a high-value added coffee capable of retaining an inherent flavor of coffee and improving coffee tastes. The method of the instant coffee using Acanthopanax koreanum comprises: a first step of extracting alcohol by mixing 70 wt% of Acanthopanax stems and 30 wt% of Acanthopanax roots and then cooking the mixture in a double boiler at a temperature of 60 to 80°C for 6 to 8 hours while the weight of water is 4 to 5 times the weight of the mixture; a second step of obtaining a powder type of Acanthopanax glucose by mixing glucose with the alcohol extracted from the first step and then drying the mixture; and a third step of mixing a coffee powder and sugar with the Acanthopanax glucose obtained from the second step, followed by stick packaging.
