NOVEL α-GLUCAN TRANSFER ENZYME, PRODUCTION METHOD OF THE SAME AND ITS USE

PROBLEM TO BE SOLVED: To provide a novel α-glucan transfer enzyme capable of producing branched CD by simpler processes than previous processes, by acting on α-1,4 glucan and transferring α-1,4 glucan by α-1,6 linkage to CD as an acceptor, a production method of the same and its use.SOLUTION: The invention provides a novel α-glucan transfer enzyme having activity of acting on α-1,4 glucan with a polymerization degree of at least 4 to produce α-1,4 glucan with a polymerization degree of at least 2, transferring the produced α-1,4 glucan with a polymerization degree of at least 2 to glucose residue of α-, &bgr;-, and γ-cyclodextrin by α-1,6 linkage. The invention further provides a DNA coding for the enzyme, a recombinant DNA comprising the DNA, transformed microorganisms, a production method of the enzyme, a production method of branched CD by using the enzyme, as well as its use.
