PURPOSE: Bean curd hardtack and a producing method thereof are provided to add bean curd having high nutrition to hardtack materials for offering the nutrition and the taste of the bean curd. CONSTITUTION: A producing method of bean curd hardtack comprises the following steps: inserting brown sugar, shortening, Vanillin, and black sesame paste into a mixer to obtain a first mixture; adding bean curd, an expanding agent dissolved in purified water, a pH-adjusting agent, and salt into the first mixture to obtain a second mixture; adding gluten and flour into the second mixture to obtain dough; passing the dough through a laminator and a gauge roller; passing the dough through a weight adjustment roller, and cutting the dough into the predetermined shape using a rotary cutter; and inserting the obtained dough pieces into a direct fire-baking or indirect baking type gas or electric tunnel oven, and baking the pieces at 130-280 deg C. |
