PROBLEM TO BE SOLVED: To solve the problems of whether Pleurotus eryngii can be used in fermenter culture of Pantoea agglomerans or not.SOLUTION: There is provided a fermentation and cultivation method including fermenting Pleurotus eryngii by Pantoea agglomerans, and simultaneously culturing the Pantoea agglomerans. A fermented essence of the Pleurotus eryngii obtained by the fermentation and cultivation method, a fermented essence powder of the Pleurotus eryngii obtained from the fermented essence of the Pleurotus eryngii, a fermented essence formulation of the Pleurotus eryngii in which the fermented essence of the Pleurotus eryngii or the fermented essence powder of the Pleurotus eryngii is formulated are also provided.
