PROBLEM TO BE SOLVED: To provide a flavorous acid seasoning in which the proliferation of acetic acid-tolerant lactobacilli or the like is suppressed, an antimicrobial agent composition suitable for the acid seasoning and an antimicrobial or preservation method for the acid seasoning.SOLUTION: An acid seasoning contains catechins and sucrose fatty acid ester. The acid seasoning contains 0.0005-0.007 mass% of catechins and 0.01-0.07 mass% of sucrose fatty acid ester. |
