ICE CREAM CONTAINING CARBON DIOXIDE GAS, AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide ice cream containing carbon dioxide gas of a uniform quality, having enhanced cooling sensation of ice cream and spicy taste at the same time; and a method for producing the same.

SOLUTION: The method for producing ice cream containing carbon dioxide gas includes: (a) a step of freezing ice-cream mix or frozen-dessert liquid mix obtained by aging at least one raw material selected from milk and defatted milk and injecting carbon dioxide gas into the frozen mix; and (b) a step of filling a container with the ice-cream mix or frozen-dessert liquid mix into which carbon dioxide gas is injected to produce ice cream containing carbon dioxide gas. Alternatively, the step (b) of filling the container is carried out after carrying out a step of injecting carbon dioxide gas inside a gas mixer after the step (a) of freezing the ice-cream mix or frozen-dessert liquid mix obtained by aging at least one raw material selected from milk and defatted milk.
