摘要 A method for producing processed cheese spread comprises mixing cheese with melting salt, fat component and melting the mixture. As cheese lactic fat-free cheese is used with adding flavouring supplements and skimmed milk powder, high-melting palm kernel oil is used as a fat component, sodium citrate is used as a melting salt, and carrageenan solution is introduced for formation of given texture. The solution displays synergetic interaction with casein.
