FIELD: food industry. ^ SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe components preparation, scorzonera and pomegranate peel cutting and drying in microwave field at preset process parametres, scorzonera frying and milling, additionally drying pomegranate peel by conventional method and milling it. Scorzonera and pomegranate peel are mixed at a weight ratio of 7:3. Obtained mixture is extracted with drinking water at preset process parametres. The produced extract is filtered. Syrup is cooked out of it. Cherries and syrup are packaged, vacuum-sealed and sterilised. ^ EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life. |
