<P>PROBLEM TO BE SOLVED: To provide a method for producing a fruit processed food of stone fruit and a fruit processed food of stone fruit using the same. <P>SOLUTION: The method for producing a fruit processed food of stone fruit includes the permeation step (step 101) for permeating a protective solution having a freezing point depression action into mesocarp of fruit of stone fruit before a stone hardening stage, the primary freezing step (step 102) for, after the permeation step, freezing fruit of stone fruit in a temperature range equal to or lower than the freezing point temperature of endocarp and higher than the freezing point temperature of mesocarp and the secondary freezing step (step 103) for, after the primary freezing step, freezing the fruit of stone fruit in a temperature range equal to or lower than the freezing point temperature of mesocarp. Since the protective solution permeates mesocarp, cell destruction by freezing is suppressed, however, cell destruction by freezing is accelerated in endocarp into which the protective solution hardly permeates and texture and seasoning concentration of both endocarp and mesocarp are homogenized. <P>COPYRIGHT: (C)2011,JPO&INPIT |
