PROBLEM TO BE SOLVED: To provide a method for producing nemacystus caramel comprising slowly boiling up nemacystus for 4 hours or more until the nemacystus becomes meltable to draw out sweetness and stickiness inherent in nemacystus so as to produce nemacystus caramel having sticky and moist feeling and smooth taste in the mouth, in view of the defect that conventional confectionery utilizing nemacystus is reduced in the sweetness and the stickiness each inherent in the nemacystus due to cutting of the nemacystus into fine pieces. SOLUTION: The method for producing nemacystus caramel comprises: adding (2) white sugar, black sugar and sugar-added condensed milk, (3) vegetable oil, (4) a small amount of salt, and (5) starch syrup to (1) nemacystus obtained by boiling up salt-eliminated and salty smell-eliminated fresh nemacystus for 4 hours or more until melting, charging the melted nemacystus into a mixer and adding water to be melted; boiling up the mixture for about 1 hour and a half while stirring it so as to evenly disperse the materials (2), (3), (4), (5); and thereafter coagulating the mixture in a refrigerator.
