PURPOSE: A manufacturing method of a jerky is provided to improve the productivity and save the labor cost thereof through the automation of a wrapping process thereof. CONSTITUTION: A method of manufacturing a jerky comprises the steps of: semi-thawing a frozen jerky at 4°C; removing impurities such as fascia and so on from the jerky; slicing the jerky in certain thickness; completely removing the sliced jerky and removing blood from the jerky; mixing the jerky with a seasoning at a tumbler; maturing the jerky at 4°C for 24 hours; and panning the jerky. |
