<P>PROBLEM TO BE SOLVED: To provide a flavor improver for a beer-flavored beverage, improving, imparting or enhancing body taste, sweetness and deliciousness originally possessed by beer to or in the beverage, imparting proper roasted feeling, and increasing fresh feeling to heighten palatability by being added to the beer or the beer-flavored beverage. <P>SOLUTION: The method for producing the flavor improver for the beer-flavored beverage includes collecting the perfume of a roasted grain by a steam distillation method as the first step, obtaining an enzyme-treated essence by subjecting a residue to the treatment with a sugar-degrading enzyme as the second step, and mixing the enzyme-treated essence obtained at the second step with the collected perfume obtained at the first step as the third step. <P>COPYRIGHT: (C)2011,JPO&INPIT |
