PURPOSE: A method for manufacturing instant cup scorched rice using lotus roots is provided to maintain specific color, taste, and flavor of scorched rice. CONSTITUTION: A method for manufacturing an instant cup scorched rice using lotus roots comprises: a step of adding 1-80 weight% of lotus root powder to grain ingredient; a step of adding water for 20-30% of moisture content to make dough; a step of gelatinizing and extruding the dough in a extrusion machine at 60-80°C; a step of making lotus root rice having rice granule form; a step of heating at 200-320°C using a hot-air roaster; and a step of puffing.
