<p><P>PROBLEM TO BE SOLVED: To provide a method of manufacturing a compost of high nitrogen content capable of easily obtaining a compost of high nitrogen content from an organic waste. <P>SOLUTION: In this method of manufacturing a compost of high nitrogen content, 0.01-3 pts.mass at least a carbon source selected from sugar and fat is compounded to 100 pts.mass organic waste of high nitrogen content of not higher than 15 C/N ratio, then composting treatment is carried out in an aerobic condition.
