摘要 <p>Disclosed is a method for manufacturing protein. A protein in which a higher-order structure has been lost is brought into contact with an aqueous solution of 1 to 3% lauroyl glutamic acid or other specific surfactant at pH 6.5 to 9.0, and a solubilized solution of said protein is obtained. The obtained solubilized solution is added to a buffer solution with pH 6.5 to 9.0 containing 0.1 to 1.2M arginine or an arginine derivative, the specific surfactant, such as lauroyl glutamic acid, in the mixed solution obtained is lowered to 0.02 to 0.275%, and in this way a protein is produced in which a higher-order structure is restored to its natural state. Thus, a higher-order structure in a natural state can be easily restored in a protein, while at the same time surfactants are smoothly eliminated from the protein.</p>
