Dried fish slices using red ginseng extract and a preparation method thereof are provided to reduce the fishy smell of dried fish slices while improving a taste thereof and to show a medicinal effect of red ginseng. A method for preparing dried fish slices comprises the following steps of: adjusting the moisture content of dried fish slices to 40-60%; dipping the dried fish slices in a red ginseng concentrate; aging the dipped fish slices in a freezer at 0 ~ -10°C for 60-80 hours; drying the aged fish slices in a drier; roasting the dried fish slices in a roaster of 120~180°C; and compressing the roasted fish slices. The dried fish slices represent dried squid slices, dried Doryteuthis bleekeri slices or dried filefish slices. |
