PROBLEM TO BE SOLVED: To enhance the degree of stability of the volume of a fillet, in a slicing method for the fillet F of a fish body. SOLUTION: In the slicing method, the material is intermittently fed to a cutting receiving part 6 side and is sliced by a cutting blade 21 crossing a material feeding transfer passage while approaching to the cutting receiving part 6 during when feeding of the material is stopped. A cutting surface Fa is photographed by a camera 4 arranged at a discharge side position of the cut material so as to be directed to the cutting surface Fa of the material. Relative to the photographed image, an area of the image of a portion occupied by a predetermined set color is measured, A feeding amount of the material in every cutting is determined while making a value obtained by dividing a target cross section area or the correction value by the image cross section area as a base.
