It is intended to provide 1-or 6-deoxy forms corresponding to all the aldohexoses, ketohexoses and sugar alcohols based on deoxyizumoring, and a method for systematically producing the same. A method for producing a deoxyketohexose and a derivative thereof, characterized by producing a corresponding 1-deoxy-D-ketohexose, 6-deoxy-D-ketohexose, 1-deoxy-L-ketohexose or 6-deoxy-L-ketohexose, which is an objective substance, by epimerization of the 3-position of a 1-deoxy-D-ketohexose, 6-deoxy-D-ketohexose, 1-deoxy-L-ketohexose or 6-deoxy-L-ketohexose, which is a raw material, using a deoxyketohexose isomerase derived from Pseudomonas cichorii ST-24 (FERM BP-2736). ® KIPO & WIPO 2009 |
