摘要 A method for manufacturing sweet-improved enzymatically modified stevia is provided to improve sweetness of the stevia and to use the stevia as a sweetening agent, a flavor enhancer, a flavor altering agent and a reagent. A method for manufacturing sweet-improved enzymatically modified stevia comprises the following steps of: adding 0.1-10 %(w/w) of stevia extract into an aqueous solution containing a selected glycosyl donor in stevia extract, dextrin or starch; adding 0.001-2.0 %(w/w) of stevia extract of alpha-amylase glucosidase selected from glucoamylase, alpha-amylase, and beta-amylase; absorbing an obtained reaction solution; eluting a primary polymeric adsorbent with 40~60% of alcohol; eluting a second polymeric adsorbent with 70~90% of the alcohol; uniting elution liquid and removing a solvent.
