<P>PROBLEM TO BE SOLVED: To solve problems, wherein in conventional astringent persimmon processings, much initial investment for equipment, such as a far infrared drier, dehumidifier is required, and further, large amounts of labor cost and material cost for astringency removal, bactericidal treatments, such as 2 stage drying, sulfur fumigation, are required, and also since matured persimmons or persimmons having skin are not suitable as raw materials, and peeled skins are produced in a large amount as waste materials. <P>SOLUTION: This method for producing the dried astringent persimmons having skin is provided by cutting the calyx of the astringent persimmons, after washing with water and scooping out for accelerating the evaporation of water content in fruit flesh. When skin is attached, dried astringent persimmons are obtained by blowing a hot wind of 70 to 90°C at 0.5 or higher to 2.5 m/s speed. Here, production equipment, such as far-infrared light drier, dehumidifier, is not required, and the dried astringent persimmons having the skin are manufactured in 2 days, skin-peeled round fruits are manufactured in one day, and skin-peeled sliced fruits are manufactured by half a day. The bactericidal treatment and astringency removal are performed simultaneously by the hot wind drying. Since the persimmons having the skin or matured persimmons can be used as raw materials, it is possible to adjust the period for harvesting or processing, with less waste materials being produced.
