<P>PROBLEM TO BE SOLVED: To provide a frozen eel processed food capable of offering boiled eel which is suppressed in unpleasant odors, after thawing and has soft texture and superior flavor. <P>SOLUTION: This frozen eel processed food is obtained by treating boiled eel with refined sake followed by freezing. A method for producing the frozen eel processed food comprises, preferably adopting a form of treating boiled eel with refined sake of 20 mm<SP>3</SP>per g or higher of boiled eel, a form of treating boiled eel with refined sake corresponding to alcohol of 2.5 mm<SP>3</SP>per g or higher of boiled eel, or a form of treating boiled eel with refined sake, through bringing refined sake into contact with boiled eel for at least 5 min. <P>COPYRIGHT: (C)2009,JPO&INPIT |
